Slow drying bronze drawn durum wheat semolina pasta
In the National Park of Cilento, Vallo di Diano and Alburni, south of Salerno, we cultivate our wheat, with integrated phytosanitary defense regulations, without the use of herbicides, in order to obtain genuine and environmentally friendly products.
We produce high quality durum wheat semolina with a low gluten content. Pietro Cava's pasta is bronze drawn and dried at a low temperature, 45 degrees for 23 / 36h, to preserve all its extraordinary properties unaltered.
